Here's my recipe for how not to grill up a great New York strip steak:
- Take some Montreal Steak Seasoning.
- Add in some minced garlic.
- Stir them together with some olive oil and balsamic vinegar.
- Apply liberally and grill.
- Put out the fire.
It all went to hell in step three, but we didn't figure that out until somewhere between steps four and five. Oil and grill, not so good.
Oh, and hi Teddy. This is why I had to get off the phone so fast. Thank God for Chick-Fil-A.

actually, EVOO (or other cooking oil) works really well with steak (kosher salt, fresh cracked pepper and EVOO is all you really need, IMHO).
The problem wasn't the oil -- it was leaving the steak unattended.
Actually, here's a tip to try out next time (assuming you don't have a squirt bottle with water to douse the flames): before you grill, place a piece of alum. foil on one side of the grill (maybe 12 x 12 inches or so). Place your meat on the grill (not on the foil), after the grill has gotten very hot. It actually shouldn't flame up, but if it does, simply move the steak(s) to the foil and wait for the flame to die down, then replace the steaks on the grates.
It's a damn shame to see what you did to those steaks. Please don't do that again :(
